A little bit everyday!

Feeling really good today. Jogging a little more everyday when taking and picking up William from school. Seeing the difference in my body, very slowly! But Slow and steady is best. I need to remember that, what I am doing is better than doing nothing!! AND the bonus,,,,,, It is not going to hurt me. Daily exercise of any kind is only making your mind and body stronger!

KB's Homemade Apple Sauce

KB’s Homemade Apple Sauce

Today my little William requested that I make homemade Applesauce for him to have as a snack when he gets home from school.

My though……. Done. I have never made applesauce before, but heard it was really simple. So I had Gala Apples that I had gotten from Costco at the beginning of the week. The family had only eaten a few of them and there was still 11 left. So instead of letting them go bad. Applesauce here we come.

Ingredients: – 11 Apples made about 5 cups of Applesauce

11 Gala Apples
Cinnamon
2 Tbsp Sugar
1 cup filtered water.
Squeeze of 1/2 lemon

1 Dutch Oven (you could use a crock pot & cook all day)
My emulsion blender

 

That is it. 5 simple ingredients and my good old Red Dutch Oven to cook on the stove.

The directions are simple. Peel the apples. Cut into slices. I then covered them with the sugar and cinnamon. I placed them in the dutch oven and stirred them up, Adding the water and lemon! Cover with lid, Turned on my electric stove on 5 and let simmer until tender and soft enough to blend up using my emulsion blender.

Blam that is it. Easy Peasy Applesauce. So easy I see doing this a lot over the summer when the local Apple Farms have tons of apples in season to pick.

What is Quinoa?

This picture here is 2 cups of dry Quinoa which turns into 4 cups total after being cooked.

Quinoa!

What is it? It is a grain grown mainly for it’s edible seeds.

What do I like about it?

  1. It is GLUTEN FREE (whoop whoop)
  2. It is high in protein.
  3. It is similar to couscous and cooks like a rice.
  4. It is very versatile.
  5. I LOVE it and it tastes great!!
  6. I can use it for my breakfast, lunch or dinner.
  7. It is good cold or hot.

How to cook Quinoa:

Boil 4 Cups of Water
Add 2 cups of Dry Quinoa
1 cube of Chicken Bullion (optional)
Once your water comes to a boil add the Quinoa simmer on low for approximately 15 minutes. The seeds will pop and open up. Serve as a side or add in your favorite foods to turn into one healthy and scrumptious meal.
