The kids love granola… Well who doesn’t! But it is so expensive and usually has ingredients that are less desirable or it is just to plain expensive.

So using a variety of different recipes I researched online. {Sorry I don’t remember off hand which ones. I will try and locate soon so I can give them credit.} I created up some yummy granola that the whole family loves.

 

 

 

 

  • 4 cups oatmeal (I used the old fashion kind)
  • 2 cups rice Krispies
  • 1 cup rice puffs
  • 1/2 cup sliced almonds
  • cinnamon to taste
  • 1/2 cup honey
  • 2/3 cup brown sugar
  • 1/4 cup butter
  • 1 tsp vanilla
  • Sheet pan
  • parchment paper

 

  • Place all your dry ingredients in a huge bowl. Set aside
  • In a small pot on stove combine your honey, brown sugar & butter. Bring to a boil. Let simmer for a few minutes. It’s like making caramel. Wait for it to look thick and yummy.
  • Remove from stove, add vanilla and stir.
  • Pour over all your ingredients and blend well. Until your dry does not look so dry anymore.
  • Pour everything onto your sheet pan covered with parchment paper.
  • Press into pan until level and firm like. You can let sit all day to harden OR what I did was preheat my oven to 350 degrees. Once it is up to temperature. I turned it off and placed the sheet pan of granola in the oven. Leave for about 25 minutes. Remove from oven. Let cool and cut to desired sizes.

This morning I decided to make Homemade donuts. Never making them before at all I search pintrest and other online blogs for gluten free recipes. I found a few and decided to dive right in!!!

I invited the hubby in the kitchen with me because we were going to try and deep fry the donuts. AND he LOVES fried food. We don’t eat them often at all but he talks about fried foods a lot. So that was his job. He was in charge of the oil.

I mixed the recipe all up. Then I kinda realized that it was really runny so I wouldn’t be rolling out the dough and cutting donut shapes.

So we make shifted a water bottle into a pourer of batter and started our first batch. Needless to say total failure. It looked like how a funnel cake would be created but didn’t succeed at all.

My thought was maybe the batter was to runny. So I added almond flour to thicken it up. Then we tried the next batch. It was definitely thicker but still did not work what so ever.
I was thinking fine I will just bake the donuts like most people were doing anyways on these blogs. BUT I do not own one of those nifty electric donut makers. OR even a donut pan that you would bake in.

I am a woman when I set out to do something especially make donuts and we have been talking about it for a couple hours now and the kids have there hearts set on eating donuts, a mom just really has to come through.

So I dug through my baking drawer and pulled out my mini muffin tins…. Perfect I will just use these.

Worked perfectly. Baked Muffin/donuts Even better cause they are baked and not fried. I even added blueberries and raspberries to the last batch.

Now enough of my blabbing. You will find the recipe below as well as pictures of how they turned out.

Recipe: Gluten Free Donut/Muffins

Ingredients

  • 3/4 C brown rice flour
  • 1/2 C tapioca flour
  • 1/4 C potato starch
  • 3/4 c of Almond flour.
  • 3/4 C. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 2 eggs, room temperature
  • 1/4 C. vegetable oil
  • 1/2 C. milk (I used lactose free milk)

Instructions

  1. Preheat oven to 350
  2. In a bowl, mix flour, sugar, baking powder, cinnamon
  3. In a separate bowl, mix eggs, oil, and milk.
  4. Gradually pour flour mixture into egg mixture. Mix together until just fully combined.
  5. Pour into your donut mold or as I used a mini muffin tin. Approx 3/4 full
  6. Bake in oven for 15 min
  7. Remove from oven and take donuts out of the mold and place on a cooling rack to then decorate with your favorite frosting/toppings.
  8. Enjoy

Recipe: Gluten free bread – the best

Ingredients

  • 1/2 c brown rice flour
  • 1/2 c sorghum flour
  • 1/4 c white rice flour
  • 1/4 c tapioca starch
  • 1/4 c cornstarch
  • 3 tsp xanthan gum
  • 2 tsp active dry yeast
  • 1 tsp salt
  • 2 eggs
  • 2 additional egg whites
  • 1 c. water, room temperature
  • 2 Tbsp vegetable oil
  • 2 Tbsp honey
  • 2 tsp apple cider vinegar

Instructions

  1. Directions:
  2. Preheat the oven to 200°F.
  3. Sift the flours, yeast and all other dry ingredients together into a medium bowl. Stir in flax meal and combine.
  4. Combine the wet ingredients in a separate large bowl using a hand-mixer on low or medium speed. When fully combined, slowly add dry ingredient mixture and mix until fully blended, with no lumps. Scrape the sides regularly.
  5. Grease a bread pan, and pour the dough into the pan. Turn off the oven and immediately place the pan in it. Do not open the door again, if possible. Allow the dough to rise for 90 minutes. It should rise to the very top of the pan.
  6. Increase heat to 350F and bake for approximately 50 minutes. The crust should be golden-brown. Allow to cool slightly before removing it from the pan to finish cooling.

My loaf fell a little flat. But REALLY I mean really this is the BEST bread recipe so far that I have tried. It really was that good!!! The next morning the whole loaf was gone. Yes completely gone!! Little upset BUT at least I know that all the kids loved it. :) Big smiles all around
